Peanut Butter Bites
Ingredients
- 1 cup peanut butter
- ½ cup sugar
- 1 block of cream cheese
- 12oz cool whip
- Package of Oreo cookies
- Stick of butter
- Mini Reese’s Peanut Butter Cups or Reese’s Pieces
Directions
- Line mini cupcake pan with liners.
- Crush Oreos (whole package) and mix up with a melted stick of butter. Put enough (about tsp) on the bottom of your mini cupcakes and lightly pack on bottom to form crust. Bake at 350 degrees for about 3-5 minutes.
- Mix with a hand mixer or stand mixer peanut butter, sugar, cream cheese, and cool whip until thoroughly mixed, make sure to scrap sides as you go.
- Using a frosting (piping) bag, fill each mini cupcake with peanut butter mixture.
- Top each mini cupcake with a mini peanut butter cup or a couple Reese’s pieces.
Keep Refrigerated and enjoy!
Other variations: I will use the Oreo mix to make a pie crust and put peanut butter mix in the pie. Topping again with the peanut butter or Reese’s pieces. I have also used this same process to make regular sized cupcakes.
